Soo most cars I am looking at have custom ecu's and got me wondering if I got an aim dashboard can you hook it up to them and get info from it? They say they support BMW /mini but is a custom version of the ecu different?

I've no direct experience of the aim dash, or whichever ecu you're looking at, but for the most part the answer will be yes - on my westie even the ancient dta e48 can send pretty much whatever info I like to the spa dash.
One thing to bear in mind is - do you want it to?
In m first year of racing, it seemed like a great idea to make a little digi display out of an old iPod, showing sector times, deltas, laps around etc. If the car had had an ecu, Icould have made it show ANY bit of ecu data in pretty much any graphic form i wanted. BUT I very quickly learned that it's all just a distraction from going fast. Now I can just see 4.5k-7k on the rev counter, 20psi-60psi on the oil pressure, and 60-100 on the temp. Anything else, I simply don't need to know. Without even moving my eyes I can see three needles (if I can't see one, then I know something might be up and I need to look properly). Otherwise,its eyes on the tarmac and brain on the job in hand. Everything else can wait for the laptop bback at the trailer.

Cheers and good call on distractions as my Caterham speedo stopped working and didn't miss it hmm. Still be useful for other systems for grabbing key info even for as you say post lap analysis

i'd imagine the control ECUs in Mini/BMW would behave like OE with reagards to talking to Dash systems.

Yeh I would hope so too as they have to I imagine replicate what the car itself is expecting.

We asked if we could link the vbox to the MINIs ECU as all it takes is a link cable. Never actually got an answer iirc as they said they'd need to look in to it to ensure we couldn't use it to fudge the ECU.

In either car I'd have to say, other than spending money, there's no point. A vbox or similar provides more data than you'll ever really need.
