What are the must haves?

We need a new car, and quite fancy having a bit more space and the ability to sleep in the van, use for road trips (convert to camper'ish with rock/roll bed etc)

It'll do some towing so would need to be the 180ps 2.0 BiTurbo version.

These are my other search prefs

LWB
T32
DSG - much nicer towing without a clutch

Nice to haves - sportline/leather and existing camper conversion

Thoughts?

For a van to be classified as a camper it will need
a bed, at least 6ft long
rear windows
2 ring hob
water supply
storage cabinets

I just bought an 09 2.5 TDI LWB and will be going through the same process. Want to have a minimum amount of stuff to get it classed as a camper.

Been generally advised to avoid DSG/ autos on older vans.

You can drive at the same speed limits as a Car (although not important when your towing), and insurance can be cheaper.

Oh forgot the table and seats. all items need to be fixed to the van floor or walls.

Adam, consider what your needs are. Most camper conversions end up with not a lot of storage space for motorsport stuff. Fine for camping things though.
If only occasional sleeping, then consider a VW Caravelle - 7 seats, middle 2 are easily removable, mid and rear seats move on rails to adjust storage size. Rear bench folds to form a full width double bed either using the middle seats, or a "Multi-Board" to extend the rear (allows you to remove the mid-seats and have more storage. Cooking facilities can be a portable stove, or a Slide Pod. Caravelle is a swb, so fits on normal parking bays at 4800mm, lwb is 5200mm. Also consider a California Beach which is a factory produced camper, but without quite as many features as a full California.

I've got a Caravelle, which I've slept in at Silverstone, took an awning tent to provide more storage. Over the last few weeks I've been using it without the middle seats and have had a 3-peice suite and some other bags of junk inside as my folks have moved house and I've been doing recycling runs. Last weekend, it was a single bed and matress, plus Ozzy in his Lintran box.

180 models have more complex turbo systems, so have a reputation of being more troublesome than the 140 versions.

Never yet seen a Japanese VIN plate with a GTW on it. Makes towing legally with one an interesting proposition I would say.

Went for an edition25 Carvelle

180 DSG etc

Will keep as it before considering options (more towards camper etc... as renny mentioned I prefer full width rear)
